When you turn your sidelights on, do your main headlamps also come on in "dim-diped" mode?

Not on mine. Are you sure you don't have a Volvo there??? :)

Nope, it's definitely not a Volvo, but I am suspicious that someone's been playing with the wiring in it at some stage...

No this is standard. There is a voltage reducer under the drivers side dash, usually black alloy finned with an orange plastic end connector.
